The Extra

ABC Mission Peanut Butter Cookies

Served in The Extra: Rita Farmer Mystery #2 by Elizabeth Sims


The ABC Mission served these to their guests for dessert. Amaryllis B. Cubitt had adapted the recipe from one given to her by Patty Mott in 1964. Amaryllis' version made hundreds of cookies. This original version makes about 3 dozen cookies.

3/4 cup fat (Amaryllis used shortening, softened butter is really good, too.)
1 cup peanut butter
1 cup dark brown sugar
1 cup white sugar
2 eggs
2 cups flour
1 teaspoon soda
1 teaspoon salt
1 teaspoon vanilla

  1. Work the fat, peanut butter and brown and white sugar together until smooth and soft.
  2. Add the eggs which have been beaten with the vanilla.
  3. Sift in the dry ingredients, mixing well.
  4. Form the dough into little balls about one inch in diameter.
  5. If the dough is too soft to handle, chill it for a while before forming balls.
  6. Place balls on cookie sheet and flatten with the tines of a fork.
  7. Bake in a moderate oven (375 F.) until lightly browned.
